The Nitto Technomic stem is the go to when it comes to adding a bunch of height to your cockpit while still retaining the classic quill stem look. This stem is what you've seen used on countless Riv builds or classic MTB's that need some rise. I wouldn't recommend running this thing fully extended on something you plan on getting rowdy on often.
